Ingredients: ( serves 4 )
2 big potatoes- Peel the potatoes and slice into 0.5cm thick.
100 grams of minced meat (chicken or pork)
1 stalk of scallion cut in 2cm length
2 tablespoon of light soy sauce
3 cloves garlic, chopped finely
1 tablespoon of dark soy sauce
1/4 pot of cooking oil to deep fry potatoes

1. Heat up wok with oil and deep fry the potatoes until golden brown. Drain the potatoes.
2. In the same wok, scoop up the oil until about 1-2 tablespoons of oil is left. Fry the garlic until golden brown.
3. Add the marinated minced meat until cooked.
4. Add in potatoes and add dark soy sauce and light soy sauce and water and simmer for about 10 minutes until potatoes are soft.
5. Garnish with scallion.
6. Ready to serve.
